Tuscan Grilled Tomato Crustini2014-07-21

This one is a huge favorite with friends and family. It has a fresh, simple taste that is always a big hit when entertaining. One of our friends made the comment that he does not like tomatoes but this was absolutely delicious (or something like that).
- 2 French baguettes
- 2 8 oz. containers of cherry tomatoes
- 3 teaspoons fresh rosemary
- Extra virgin olive oil
- 2 tablespoons white wine vinegar
- 5-6 cloves of garlic
- Kosher salt and pepper
Heat the grill up to a medium flame.
Cut the cherry tomatoes in half and add to mixing bowl.
Cut up garlic into semi-thin slivers, then add some kosher salt to cutting board and crush up the garlic using the side of a large knife.
Add the garlic to tomatoes, sprinkle with olive oil, white wine vinegar, rosemary, kosher salt and pepper. Gently mix all the ingredients up and put aside.
Cut up the French bread into 1/2" pieces and brush both sides with olive oil.
Put the tomatoes into a grilling basket and put over a medium to medium-high heat. Turn them to keep from burning. You want a nice char on them, but not black.
While the tomatoes are grilling, put the crustini on the grill for as long as it takes to get some nice grill marks, then turn over and grill the other side. This happens quickly (at least on my grill), so be careful not to burn them.
Smush 2-3 of the tomatoes onto each crustini and serve on a platter while still warm.
