This is one of my go to recipes for pulled pork. It can be used for carnitas, pulled pork sandwiches, or anything else that can use pulled pork. This recipe has a great smokey flavor that is smoothed out by the cola and brown sugar. It is really simple to make and hard to mess up.
Ingredients
Preheat the oven to 300 degrees F Add the onions to the bottom of the pot. These are just to flavor the pork, so don't worry about how they are cut up. Bigger is easier to remove later.
Sprinkle the pork butt with kosher salt and pepper, and put it on top of the onions. Cover with the adobo sauce and chipotle peppers, brown sugar, cumin, chili powder, then pour the coke over it. Stir up a bit, then cover. Put in the oven and cook for at between 5 and 6 hours depending on how big a pork butt you are using. Turn the pork around a few times to get a nice even coating of the liquid. Once the pork is done, remove it from the juice and set the juice aside. Remove the bone and shred the pork completely. Serve right away with the cole slaw. Goes great with beans and corn!
Anything that you don't use can go back in the saved juice to keep it moist for later.Method
